Baha Chicken Rice Bowl

1# chicken breast- cut up
Fresh Cilantro
Tomato
1/2 of a Sm. Onion (or chives, this is what I used)
White Rice
1 can of Black Beans, drained and rinsed
Mexican mix of shredded cheese
Avocado
Hidden Valley Southwest Chipotle dressing
1 cube of chicken bouillon
Lawrey's season salt
Black Pepper
Pinch of chili powder

In a small frying pan add 1 cube of chicken bouillon with a cup of water.  Add Lawrey's season salt, and black pepper to taste, then add a pinch of Chili powder.  Stove set at med/high, let bouillon dissolve into water.  Add Chicken breast, put lid on and let cook until done - you will probably want to turn the chicken a few time.

Dice up the Tomatoes, Avocado, Onion, and fresh cilantro, set aside. 

Once your chicken is done.  Turn stove top off and let sit while you make your white rice.  I use minute rice so I can get it done quick and the chicken will still be hot.

Once rice is done, use individual bowls, first put in rice, then Tomatoes, Onion(chives), Avocado, Black Beans, Chicken, Cheese, and sprinkle a little Cilantro on top. 

Use the Hidden Valley Southwest Chipotle dressing to taste.

Kris's Cheese Potato Soup

Oh my goodness good!  My daughter can't get enough of this stuff....

Ingredients:

8 C - Potatoes cut up
8 C - Water
8 Wylers Herbs & Spices Boullion Cubes
3/4 C - finely diced Carrots
1 tsp - Lawrys Seasoning Salt
1/2 tsp - Black Pepper (or to taste)
1 tsp  - dried minced onion
1/2 tsp - Garlic salt
16 oz - Velvetta cubed
7 oz - Sharp Cheddar Cheese cubed

Add all ingredients to a large pot.  Bring to low boil over medium heat.  Turn heat to low and let simmer until potatoes and carrots are soft.  Soup done!!

*If you want to thicken the soup up a bit you can mash a few of the potato chunks.

*Adding bacon is also good in this soup.

*I haven't tried it yet but I think corn would also be good in this.

Grandma Banks Cabbage Casserole




When I was a kid and would go to my cousin's house, his grandma Banks would make stuffed cabbage rolls - they were to die for!  My Mom got the recipe and made them periodically at our house.  I've made them but not often as they do take a little bit of time to roll up the cabbage.  Recently I saw on Facebook, a recipe for Cabbage roll casserole.  Instead of rolling the rolls you just make it layered like any hotdish/casserole.  The ingredients were different than Grandma Banks' cabbage rolls so I decided I would try hers casserole style.  Here is what I did:

Ingredients:
1 medium cabbage
1 lb ground beef
1 lb ground sausage
1 cup of uncooked instant rice
46 oz of tomato juice
cayenne or red pepper to taste (I used about 1/2 tsp)
2 14oz cans of sauerkraut
1 large chopped onion (her recipe actually called for 2 lg onions but 1 seemed sufficient.
Tabasco sauce to taste (I used 1 tsp)

In large pan/pot brown hamburger, sausage, and onions.  Drain off fat.
Drain the cans of sauerkraut and add to the burger mix.  Next add in the tomato juice, cayenne, tabasco, and rice, let simmer.
While meat mix is simmering, rinse cabbage and chop up into coarse pieces.  Drain any water out of the rinsed cabbage and pat dry with paper towels.
In a 9x13 casserole dish you will make the first layer with cabbage, second layer with meat mixture (make sure your meat layers totally cover the cabbage as that is what cooks it), then layer with cabbage again, and last layer with meat mixture.  Cover with tin foil, bake at 375 degrees for 45 min.  I actually ended up with enough ingredients to make both a 9x13 pan and a 9x9 pan.

This stuff is freezes well and tastes just as good (if not better) the second time around!

OMG Snack Mix

Heard about this and had to try it.
When you serve this at a party, football tailgater, holiday get-together, etc., you will not believe how fast it will disappear.  Don't know what else to call it but OMG Snack Mix.



Ingredients you will need:
1 single serve Orville Redenbacher microwave popcorn (or brand of your choice)
Kelloggs Corn Pops cereal
Fritos corn chips (regular)
Almond Bark Squares (white chocolate), I used 2 squares.
1/2 tsp of vegetable oil

Tools/Utensils needed:
Fork
Small pan
Rubber scraper/spatula
Cookie sheet

Directions:

1.  Using your small pan, on medium heat, slowly melt the white chocolate squares.  I stirred mine frequently to help it along.  Once melted I added about a 1/2 tsp of vegetable oil to make the drizzling a little smoother.   Keep on a very low setting just enough keep it melted and not start to thicken up.

2.  Place your popcorn, corn pops, and fritos out on the cookie sheet.  I divided mine equally in thirds, onto the cookie sheet.  Make sure they are all layed out, not too thickly because you want to be able to get good coverage when drizzling the white chocolate.  (you can layer later).


3.  Using the fork, dip into the white chocolate and drizzle all over the popcorn/fritos/corn pops.  You will need to repeatedly dip into the pan to keep drizzling.  I periodically used the spatula to bring all the melted chocolate to one side of the pan so I could dip in to it easier.  Once I had good coverage on the mixture I added another layer of all three ingredients and drizzled chocolate again.  I got 3 layers worth before my chocolate ran out.



4.  Leave this set out until the white chocolate sets up again.  Put mixture into a large bowl and mix it up a bit, parts of it will be stuck together, I broke it up as I put it into the bowl.
IF you have leftover (slim chance), put in a ziplock bag - this will keep it all crunchy and not stale/chewy.



SERVE  *watch your hands or you may get bitten in the rush to eat this!  Ha!
Not a very heathy treat... but ah who cares!
